7 Spice Mistakes You Are Probably Making
No offense, but you’re missing out on all that spices have to offer. Don’t make these spice mistakes…please!
1. You never buy whole spices.
It’s a fact that many spices are more flavorful when still in the whole form (not all, but some). For instance, peppercorns, mustard, coriander, cumin, cardamom are all examples of products you should buy whole and reduce their texture at home. Whenever you can, buy whole spices and then ground with a mortar and pestle right before cooking.
2. You don’t understand the flavor profiles of spices or how to complement them.
When cooking you need to consider what spices will complement each other. Spices will be sweet, pungent, tangy, or hot. Too much of one thing is overpowering. This is one of the main reasons why spice blends can be so useful.
3. You buy generic or discounted spices at the store.
My ongoing mantra is “Things cost what they cost for a reason.” Your task as the buyer is to discover what the reason is. Most reputable spice purveyors will closely inspect spices to eliminate impurities. The rejected spice often gets sold for a bargain.
4. You’re careless about storing your spices.
Spices that are not kept in airtight containers will lose their flavor fast. Don’t keep your spices in plastic bags. And while we’re at it, don’t keep your spices on top of the stove. A cool, dry place (like a drawer or a cabinet – go figure!) is best.
5. You pour spices directly from the container into the hot, steamy pot.
Moisture is the enemy when trying to keep spices fresh and clump-free. Use your teaspoon to divvy out more spice into a hot, steamy pan.
6. You don’t cook with spice blends.
Why not save time? Why not rely on spice combinations that chefs have relied on for centuries before you? Why not create and cook with a unique blend that few chefs have?
7. You use too little spice.
There’s no reason not to open the spice cabinet for every meal you cook. For starters, many spices have health benefits. Next, spices don’t last forever, so use them before it’s too late! Last, spices not only add flavor but they also bring out the flavor of your other ingredients. You deserve to get the best taste out of every bite.
